Colatura di alici is an Italian fish sauce made from anchovies, from the small fishing village of Cetara.

The sauce is a transparent, amber-colored liquid, produced by fermenting anchovies in brine. It goes well with spaghetti or linguine, but it is also very good to use on boiled potatoes or vegetables. Pasta with garlic, oil, chilli pepper and anchovy sauce is a dish that in Cetara is traditionally prepared on Christmas Eve.
